Today, shamrocks are a symbol of luck, I've heard many versions over the years. The one I'm most likely to believe is that the shamrock stands up before the rain rolls in as a warning, giving you time to duck into a pub and grab a pint. Lucky, right?
Legend has it that St. Patrick used a three leaf clover to represent the Holy Trinity, so it makes perfect sense to have an association with St. Patrick's Day, but don't really see how luck ties in.
Interestingly, you'll mostly see and hear about four leaf clovers being associated with St. Patrick's Day here in the USA.
Ancient Druids also celebrated the shamrock and the number three, and many of the surviving Pagan religions still do celebrate and honor the number three in it's many representations. It's no wonder Why the legend says St. Patrick chose the sacred shamrock to win their trust and eventually convert them to Christianity.
Perhaps the shamrock was destined to become a symbol of Ireland when it was outlawed during the days of Queen Victoria to be worn on military uniforms by punishment of death. Soon afterwards, shamrocks were on everything. It was no longer just a symbol of religion, it was now a statement of rebellion, national pride, and of course still a symbol of religion.
